Oregon Brew Lab's sensory classes offer a scientific approach to mastering palate and taste perception. Through hands-on experiences, participants learn to identify and appreciate nuanced flavors, aromas, and textures in beverages. Our scientifically guided sensory education enhances your brewing journey, enabling you to create drinks that engage and intrigue consumers on a sensory level.

Available Classes and Descriptions

101 Taste vs. Flavor

Explore the difference between Taste, Flavor, and Mouthfeel using candy and beer. It’s easy to confuse similar flavors and the use of vague vocabulary can make it harder. Learn to distinguish between different types of trigeminal sensory experiences and apply it to drinking and evaluating beer.
Choose 2 Flavors: Herbal, Earthy, Floral, Spicy, Buttery

102 Evaluate Beer like a Professional

Learn to evaluate beer with a critical palate and provide Sensory Data for the brewery. Walk through the steps professional beer judges take and learn to accurately describe taste and flavor using common sensory vocabulary. Learn to use a Profile Wheel while evaluating a beer. Determine which beers are evaluated; focus on flagships, seasonal, all one style, rare selections or experimental one-offs!

103 Off-Flavor Exploration

Improve the palate by taking an in-depth look at cause, prevention, and identification of a common off-flavor. Taste the off flavor(s) in increasing concentrations to find the detection threshold up to 3x! With careful consideration of flaw selection, 2 off-flavors can be demonstrated in a longer class. [Two strong flaws can create palate fatigue]
Choose 1 or 2: Acetaldehyde (apple), Diacetyl (butter), DMS (veggie), or Ethanol (alcoholic)

Additional Class Options

BrewLab Sensory Seminar

You can offer your employees and consumers a chance to take all three classes (101, 102, & 103)! Bundle all of the classes together for a half day Seminar. Seminars last for approximately three hours with a two palate-fatigue breaks. It's recommended to start at 9am for the most neutral palates. Options for each class are preset.
